Garlic Butter Steak Bites with Crispy Potatoes

Ingredients:

– 1 lb (450g) sirloin steak, cut into bite-sized pieces
– 4 tablespoons unsalted butter
– 4 cloves garlic, minced
– 1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)
– 1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)
– Salt and pepper to taste
– 1 lb (450g) baby potatoes, halved
– 2 tablespoons olive oil
– Fresh parsley, chopped for garnish

Directions:

1. Begin by preheating your oven to 425°F (220°C).
2. In a mixing bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast in the preheated oven for about 25-30 minutes, or until golden brown and crispy.
3. While the potatoes are roasting, season the steak bites with salt and pepper.
4. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Once bubbling, add the seasoned steak bites in batches to avoid overcrowding. Sear them for about 2-3 minutes per side until browned and cooked to your liking.
5. Reduce the heat to medium. Add the remaining butter, minced garlic, rosemary, and thyme to the skillet. Stir to combine and let the garlic infuse for about 1-2 minutes, coating the steak bites in the flavorful garlic butter.
6. Once the potatoes are done, remove them from the oven and toss them with the garlic butter steak bites in the skillet for extra flavor.
7. Serve immediately, garnished with freshly chopped parsley.
