Baked Lemon Garlic Salmon with Roasted Vegetables

Baked Lemon Garlic Salmon with Roasted Vegetable

Ingredients:

– 1 lb salmon fillet
– 1 cup baby carrots, halved
– 1 cup broccoli florets
– 1 cup cauliflower florets
– 1 yellow bell pepper, diced
– 2 tbsp olive oil (divided)
– 2 tbsp lemon juice
– 2 cloves garlic, minced
– 1 tsp dried oregano
– ½ tsp salt
– ½ tsp black pepper
– ½ tsp garlic powder
– ½ tsp paprika
– 1 tbsp fresh parsley, chopped

Instructions:

1. Preheat your oven: Begin by preheating your oven to 400°F (200°C). This ensures that your salmon and vegetables cook evenly and achieve that perfect roast.

2. Prepare your baking sheet: Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.

3. Season the salmon: Place the salmon fillet on one side of the prepared baking sheet. Drizzle with 1 tablespoon of olive oil and the freshly squeezed lemon juice. Rub the minced garlic, dried oregano, salt, and black pepper all over the salmon, ensuring it is well coated.

4. Toss the vegetables: In a large mixing bowl, combine the broccoli florets, cauliflower florets, halved baby carrots, and diced yellow bell pepper. Drizzle with the remaining tablespoon of olive oil, garlic powder, paprika, and a pinch of salt and pepper. Toss the vegetables until they are evenly coated with the oil and spices.

5. Arrange the vegetables: Spread the seasoned vegetables around the salmon on the baking sheet, ensuring they are in a single layer for optimal roasting.

6. Bake to perfection: Place the baking sheet in the preheated oven and bake for 15-18 minutes. Your salmon is done when it flakes easily with a fork and the vegetables are tender but still crisp.

7. Optional broil for extra texture: If you like a slightly crispy finish, switch your oven to broil for the last 2 minutes of cooking. Keep an eye on it to prevent burning.

8. Garnish and serve: Once cooked, remove the baking sheet from the oven. Sprinkle the salmon and vegetables with fresh chopped parsle
