Ingredients:
– 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
– 1/2 cup cornstarch
– 2 tbsp vegetable oil
– 1 red bell pepper, sliced
– 1 green bell pepper, sliced
– 1 onion, sliced
– 1/2 cup pineapple chunks
– 1/4 cup soy sauce
– 1/4 cup rice vinegar
– 1/4 cup ketchup
– 1/4 cup brown sugar
– 1 tsp garlic powder
– 1 tsp ginger powder
– Salt and pepper to taste
Directions:
In a bowl, toss the chicken pieces with cornstarch until evenly coated. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside. In the same skillet, add the sliced bell peppers and onion, stir-frying for about 3-4 minutes until tender-crisp. Add the pineapple chunks and cooked chicken back to the skillet. In a separate bowl, whisk together soy sauce, rice vinegar, ketchup, brown sugar, garlic powder, and ginger powder. Pour the sauce over the chicken and vegetables, stirring to combine. Cook for an additional 2-3 minutes until the sauce thickens slightly. Season with salt and pepper to taste. Serve hot over steamed rice or noodles.
