Honey Garlic Chicken Thighs over Rice
Ingredients:
– 4 bone-in, skin-on chicken thighs
– 1/4 cup honey
– 1/4 cup soy sauce
– 4 cloves garlic, minced
– 1 tablespoon rice vinegar
– 1 tablespoon olive oil
– Salt and pepper, to taste
– 2 cups cooked jasmine rice
– 2 green onions, sliced (for garnish)
– Sesame seeds (optional, for garnish)
Directions:
1. In a large bowl, whisk together the honey, soy sauce, minced garlic, rice vinegar, and a dash of salt and pepper to create the marinade.
2. Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes, or up to 2 hours for maximum flavor.
3. Heat the olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade, allowing any excess to drip off, and place the thighs skin-side down in the skillet.
4. Sear the chicken for about 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
5. Pour in the remaining marinade and simmer for an additional 5 minutes, allowing the sauce to thicken and glaze the chicken beautifully.
6. Serve the honey garlic chicken thighs over a bed of jasmine rice, garnishing with sliced green onions and sesame seeds if desired.
