Garlic Herb Crusted Beef Roas
Ingredients:
– 3 to 4 pounds beef roast (such as ribeye or sirloin)
– 4 cloves garlic, minced
– 2 tablespoons fresh rosemary, chopped
– 2 tablespoons fresh thyme, chopped
– 2 tablespoons fresh parsley, chopped
– 2 tablespoons olive oil
– 1 teaspoon salt
– 1 teaspoon black pepper
– 1 tablespoon Dijon mustard
– 1 cup beef broth
Directions:
1. Preheat your oven to 450°F (232°C).
2. In a small bowl, combine the minced garlic, chopped rosemary, thyme, parsley, olive oil, salt, pepper, and Dijon mustard to create a flavorful herb paste.
3. Pat the beef roast dry with paper towels and place it in a roasting pan.
4. Rub the herb mixture all over the beef, ensuring it is well coated.
5. Pour the beef broth into the bottom of the roasting pan, which will keep the roast moist and add flavor.
6. Roast the beef in the preheated oven for 15 minutes. Then, reduce the oven temperature to 325°F (163°C) and continue cooking until the desired internal temperature is reached (about 135°F (57°C) for medium-rare), which should take about 1 to 1.5 hours.
7. Remove the roast from the oven and let it rest for 15-20 minutes before slicing to allow the juices to redistribute.
