Ingredients:

Main Ingredients
– 4 large potatoes (starchy varieties like Russets for best crispiness)
– 1 cup cheddar cheese, shredded (sharp cheddar for bold flavor)
– 1/4 cup green onions, chopped

Seasonings for the Fries
– 1 tbsp paprika
– 1 tsp garlic powder
– 1 tsp onion powder
– 1/2 tsp cayenne pepper (adjust for heat preference)
– Salt and black pepper, to taste

For the Voodoo Sauce
– 1/2 cup mayonnaise
– 2 tbsp sriracha (adjust for spiciness)
– 1 tbsp honey (balances heat)
– 1 tsp garlic powder
– 1 tsp paprika

For the Topping
– 4-5 slices turkey bacon, cooked and crumbled

Directions:

1. Prepare the Potatoes
– Wash and scrub the potatoes thoroughly to remove dirt.
– Cut the potatoes into fries, about 1/4-inch thick for even cooking.
– Soak the cut fries in cold water for 30 minutes to remove excess starch for crispiness.
– Drain and pat them completely dry using a clean kitchen towel.

2. Season the Fries
– In a large mixing bowl, toss the dry fries with paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
– Ensure every fry is evenly coated.

3. Bake the Fries
– Preheat the oven to 425°F (220°C).
– Arrange the seasoned fries in a single layer on a parchment-lined baking sheet (use two sheets if needed to avoid overcrowding).
– Bake for 25–30 minutes, flipping the fries halfway through, until golden-brown and crispy.

4. Cook the Turkey Bacon
– While the fries bake, heat a skillet over medium heat.
– Cook the turkey bacon until crispy (about 5–7 minutes).
– Transfer to a paper towel-lined plate to drain excess oil, then crumble into small pieces.

5. Make the Voodoo Sauce
– In a small bowl, whisk together mayonnaise, sriracha, honey, garlic powder, and paprika until smooth.
– Adjust spiciness or sweetness by adding more sriracha or honey if needed.

6. Assemble the Fries
– Transfer the baked fries to a serving platter.
– Sprinkle shredded cheddar cheese evenly over the hot fries to allow melting.
– Drizzle the voodoo sauce generously over the cheese.
– Top with crumbled turkey bacon and chopped green onions.

7. Serve Immediately
– Enjoy while hot and crispy.
