Ingredients:
4 large eggs (room temperature)
¾ cup (150 g) granulated sugar
1 cup (125 g) all-purpose flour (sifted)
1 tsp baking powder
¼ cup (60 ml) warm milk
3 tbsp melted butter
1 tsp vanilla extract
Pinch of salt
Instructions:
Prepare the Oven and Pan:
Preheat oven to 175°C (350°F).
Line the bottom of an 8-inch (20 cm) round cake pan with parchment paper. Do not grease the sides.
Whip the Eggs:
In a large mixing bowl, beat eggs and sugar together with an electric mixer for 6–8 minutes, until pale, thick, and tripled in volume.
Add Vanilla and Milk:
Mix in vanilla extract.
Combine warm milk with melted butter and gently stir into the egg mixture.
Fold in Dry Ingredients:
In a separate bowl, sift together flour, baking powder, and salt.
Gently fold the dry mixture into the wet batter in batches using a spatula. Do not overmix.
Bake:
Pour the batter into the prepared pan.
Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
Cool:
Let the cake rest in the pan for 5 minutes, then remove and cool completely on a wire rack.
