Normande Sauce

Ingredients:
• 2 cups fish Velouté sauce
• 1/4 cup heavy cream
• 1/4 cup dry white wine
• 1 tbsp lemon juice
• 2 tbsp butter
• Salt and white pepper to taste

Preparation Instructions:
1. Heat Velouté sauce over low heat.
2. Stir in white wine and simmer for 5 minutes.
3. Add heavy cream and lemon juice, stirring until smooth.
4. Finish with butter and season with salt and white pepper.
