Amish Onion Fritters

Ingredients:

2 cups finely chopped onions (about 2 medium onions)
1 cup all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
3/4 cup milk
Vegetable oil, for frying

Directions:

Prepare the Batter:
In a large mixing bowl, combine the flour, sugar, baking powder, salt, pepper, and garlic powder.
Gradually add the milk, whisking until smooth, then fold in the chopped onions until evenly coated.
Heat the Oil:
In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat. To test if the oil is ready, drop a small amount of batter into the oil; it should sizzle and begin to brown.
Fry the Fritters:
Using a spoon, scoop small portions of the onion batter and carefully place them into the hot oil, flattening slightly with the back of the spoon.
Fry each side for about 2-3 minutes or until golden brown and crispy. Remove and drain on a paper towel-lined plate.
Serve:
Serve warm, optionally with sour cream or a dip of your choice.
