Mozzarella Onion Rings
Crispy, gooey, and packed with flavor, these mozzarella-stuffed onion rings are the perfect snack or party appetizer
Ingredients
2 large white onions
8 slices of mozzarella cheese
2 cups of flour
5 eggs
2 cups of bread crumbs
Oil for frying
Marinara sauce for dipping
Instructions
Prepare the onions
Peel the onions and cut them into thick rings, about half an inch wide. Gently separate the rings, keeping pairs of one larger and one slightly smaller ring to nest together.
Prepare the cheese
Cut each slice of mozzarella into four strips. These strips will be used to fill the space between the paired onion rings.
Assemble the rings
Place a smaller onion ring inside a larger one, creating a space between them. Fill the gap all the way around with mozzarella strips, pressing them in snugly so they stay in place.
Repeat with the remaining rings. Once done, place the stuffed rings on a tray and freeze them for about one hour to help them hold their shape during coating and frying.
Coat the rings
Prepare three bowls for breading: one with flour, one with beaten eggs, and one with bread crumbs.
Take the frozen rings and coat each one in flour, then dip into the egg, and finish with bread crumbs. For a crispier finish, repeat the egg and breadcrumb steps.
Place the coated rings back in the freezer for 30 minutes to firm up again before frying.
Fry the onion rings
Heat oil in a deep fryer or a large, deep skillet over high heat. The oil should reach about 350°F or 175°C.
Carefully add the onion rings and fry until golden brown, about one minute. Do not overcrowd the pan and be careful not to overcook, as the cheese can start to ooze out.
Serve
Transfer the fried onion rings to a paper towel-lined plate to remove excess oil.
Serve immediately with warm marinara sauce for dipping.
