Mexican White Trash Casserole

Ingredients:

1 lb ground beef
1 small onion, diced
1 can (15 oz) black beans, drained and rinsed
1 can (10 oz) diced tomatoes with green chilies, drained
1 cup frozen corn
1 cup shredded cheddar cheese
1 cup crushed tortilla chips
1 can (10.5 oz) cream of chicken soup
½ cup sour cream
1 tsp chili powder
½ tsp cumin
Salt and pepper to taste
Chopped green onions and cilantro (optional, for garnish)

Instructions:

1. Preheat oven to 350°F (175°C).
2. In a skillet over medium heat, cook ground beef and onion until beef is browned and onion is softened. Drain excess fat.
3. Stir in black beans, diced tomatoes, corn, chili powder, cumin, salt, and pepper. Cook for 5 minutes.
4. In a bowl, mix cream of chicken soup and sour cream until smooth.
5. In a greased 9×13-inch baking dish, layer half of the beef mixture, half of the crushed tortilla chips, half of the cheese, then repeat layers.
6. Pour sour cream mixture evenly over the top.
7. Bake uncovered for 25–30 minutes until bubbly and cheese is melted.
8. Garnish with green onions and cilantro if desired before serving.

Notes:

Use ground turkey for a leaner option.
Add jalapeños or hot sauce for extra spice.
Serve with salsa and guacamole on the side.
