Ground Beef & Veggie Skillet with Sweet Potatoes & Zucchini
250g (9 oz) ground beef (lean preferred)
1 tbsp olive oil
1 medium sweet potato, peeled and diced
1 medium zucchini, sliced into half-moons
½ small onion, diced
1 garlic clove, minced
½ tsp paprika
½ tsp cumin
Salt & pepper to taste
Optional: chopped parsley for garnish
1️⃣ Cook the Sweet Potatoes:
In a large skillet over medium heat, add olive oil and diced sweet potatoes. Cook for 7–10 minutes, stirring occasionally, until starting to soften. Remove and set aside.
2️⃣ Sauté Beef & Aromatics:
In the same skillet, add the ground beef and cook until browned. Add onion and garlic, cooking for another 2–3 minutes. Season with paprika, cumin, salt, and pepper.
3️⃣ Add Zucchini & Finish:
Stir in zucchini and partially cooked sweet potatoes. Cook for another 7–8 minutes until vegetables are tender and flavors meld. Adjust seasoning.
4️⃣ Serve Hot:
Sprinkle with fresh parsley and enjoy as-is or over rice, quinoa, or greens!
