Heavenly Cherry Pistachio Cheesecake Bars
Ingredients:
For the crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the cheesecake filling:
16 oz cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/4 cup sour cream
1/2 cup chopped roasted pistachios
1/2 cup cherry preserves
For topping (optional):
Additional chopped pistachios
Fresh cherries (pitted and halved)
Directions:
Preheat the oven to 325°F (163°C). Line a 9×9-inch baking pan with parchment paper.
In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press into the bottom of the prepared pan to form an even crust.
Bake the crust for 10 minutes, then set aside to cool.
In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
Add eggs one at a time, beating well after each addition. Mix in vanilla extract and sour cream.
Fold in chopped pistachios gently.
Pour the cheesecake batter over the cooled crust, smoothing the top.
Drop spoonfuls of cherry preserves on top and swirl gently with a knife to create a marbled effect.
Bake for 35-40 minutes or until the center is just set
Let cool to room temperature, then refrigerate for at least 4 hours (preferably overnight).
Before serving, garnish with fresh cherries and extra pistachios if desired. Slice into bars and serve chilled.
