Chicken Cordon Bleu Bites

For 24 bites:
2 large chicken breasts, cut into 1-inch cubes
12 slices of ham, cut into small squares
12 slices of Swiss cheese, cut into small squares
1 cup all-purpose flour
2 large eggs, beaten
1 cup breadcrumbs
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Vegetable oil for frying
Instructions
Prepare the bites: Sandwich a piece of ham and cheese between two chicken cubes, securing with a toothpick if needed.
Set up the breading station: Place flour in one bowl, beaten eggs in another, and breadcrumbs mixed with garlic powder, onion powder, paprika, salt, and pepper in a third bowl.
Coat the bites: Roll each chicken piece in flour, dip it in the egg, and coat it in breadcrumbs. For extra crispiness, repeat the egg and breadcrumb steps.
Heat the oil: In a deep skillet or fryer, heat about 2 inches of oil to 350°F (175°C).
Fry the bites: Fry a few bites at a time until golden brown and cooked through, about 3–4 minutes. Remove and drain on a paper towel-lined plate.
Serve and enjoy: Serve hot with your favorite dipping sauces, such as honey mustard, ranch, or marinara.
