Bok Choy with Ginger Soy Sauce
Ingredients:
1 lb baby bok choy, halved lengthwise
1 tablespoon sesame oil
2 cloves garlic, minced
1 tablespoon fresh ginger, finely grated
2 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar
1 teaspoon maple syrup (or honey)
1 tablespoon water
1 teaspoon cornstarch (optional, for thickening)
1 teaspoon toasted sesame seeds (for garnish)
Red chili flakes (optional, for heat)
Directions:
Rinsebok choy thoroughly and pat dry.
In a small bowl, whisk together soy sauce, rice vinegar, maple syrup, water, and cornstarch (if using). Set aside.
Heat sesame oil in a large skillet or wok over medium-high heat.
Add garlic and ginger, sauté for 30 seconds until fragrant.
Add bok choy, cut side down, and sear for 2–3 minutes.
Flip and cook another 2 minutes until slightly tender but still crisp.
Pour the sauce mixture into the skillet and stir to coat the bok choy.
Cook another 1–2 minutes until sauce thickens slightly and bok choy is glossy.
Sprinkle with sesame seeds and chili flakes before serving.
