Cozy Homemade Potato Soup
Ingredients:
6 medium Russet potatoes, diced
1 onion, diced
2 carrots, diced
2 celery stalks, diced
6 slices bacon, chopped
3 tablespoons unsalted butter
1/4 cup all-purpose flour
4 cups chicken broth
2 cups milk
Salt and pepper to taste
1 cup shredded cheddar cheese (optional)
Chopped fresh chives for garnish (optional)
Method:
1️⃣ Cook the bacon in a large pot over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon drippings in the pot.
2️⃣ Add the diced onion, carrots, and celery to the pot. Cook until the vegetables are tender, about 5-7 minutes.
3️⃣ Stir in the butter until melted, then sprinkle the flour over the vegetables. Cook for another 2-3 minutes, stirring constantly.
4️⃣ Gradually add the chicken broth and milk, stirring continuously until the mixture is smooth and starts to thicken.
5️⃣ Add the diced potatoes to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.
6️⃣ Season with salt and pepper to taste. For a creamier soup, use an immersion blender to blend part of the soup, leaving some chunks for texture.
7️⃣ Stir in the cooked bacon and cheddar cheese, if using. Let the cheese melt completely before serving.
