Cowboy Casserole

Ingredients:

– 1 tablespoon olive oil
– 1 medium onion, diced
– 2 cloves garlic, minced
– 1 pound ground beef
– 1 teaspoon smoked paprika
– 1/2 teaspoon black pepper
– 1/2 teaspoon salt
– 1 can (10.5 oz) cream of mushroom soup
– 1/2 cup sour cream
– 1 can (15 oz) whole kernel corn, drained
– 1 1/2 cups shredded cheddar cheese, divided
– 1 bag (32 oz) frozen tater tots
– 2 green onions, chopped (optional)
– Fresh parsley for garnish (optional)

Directions:

1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish.
2. Heat olive oil in a large skillet over medium heat. Add diced onion and garlic and cook for 2-3 minutes until fragrant.
3. Add the ground beef, smoked paprika, salt, and black pepper. Cook until beef is browned and fully cooked, breaking it up with a spatula. Drain any excess fat.
4. Stir in cream of mushroom soup and sour cream until well blended and creamy.
5. Add drained corn and 1 cup of shredded cheddar cheese. Mix everything together until combined.
6. Spread the beef mixture evenly into the prepared casserole dish.
7. Top with an even layer of frozen tater tots, arranging them neatly.
8. Sprinkle the remaining 1/2 cup of cheddar cheese over the tater tots.
9. Bake uncovered for 35-40 minutes, or until the tater tots are golden and crispy and the casserole is bubbling.
10. Let cool for 5-10 minutes before serving. Garnish with chopped green onions and parsley if desired.
