Baked Zucchini Cheese Casserole
Creamy Baked Zucchini & Three-Cheese Medley

  Ingredients:

4 medium zucchini, thinly sliced
1 tablespoon olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1/2 cup sour cream
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
2 large eggs
1/4 teaspoon dried thyme
1/4 teaspoon black pepper
1/4 teaspoon salt
1/4 cup chopped fresh parsley (optional garnish)
Cooking spray or butter for greasing

  Directions:

1. Preheat your oven to 375°F (190°C). Lightly grease a medium-sized baking dish with cooking spray or butter.
2. In a skillet over medium heat, warm the olive oil. Add onion and garlic and sauté until translucent, about 4 minutes. Remove from heat and let cool slightly.
3. In a large bowl, whisk together eggs, sour cream, thyme, salt, and pepper. Stir in the sautéed onions and garlic.
4. Fold in the sliced zucchini, Parmesan, mozzarella, and cheddar until well combined.
5. Pour the mixture into the prepared baking dish, spreading it evenly.
6. Bake for 35–40 minutes, or until the top is golden and the center is set.
7. Let cool for 5 minutes before serving. Garnish with fresh parsley if desired.
