Caesar Chicken with Asparagus
Ingredients:
4 boneless, skinless chicken breasts
Salt and black pepper to taste
1 tablespoon olive oil
1 bunch (about 1 lb) fresh asparagus, trimmed
1/2 cup Caesar dressing (store-bought or homemade)
1/3 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried Italian herbs
Lemon wedges (for serving)
Fresh parsley, chopped (optional, for garnish)
Directions:
Preheat Oven:
Preheat your oven to 400°F (200°C).
Season the Chicken:
Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, garlic powder, onion powder, and Italian herbs.
Sear the Chicken:
Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and sear for 2–3 minutes on each side until golden. Remove from heat.
Add Asparagus:
Arrange the trimmed asparagus around the chicken in the skillet. Drizzle a little olive oil over the asparagus and season lightly with salt and pepper.
Add Caesar Dressing and Cheese:
Spoon the Caesar dressing evenly over the chicken breasts. Sprinkle Parmesan cheese over the top.
Bake:
Transfer the skillet to the oven and bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the asparagus is tender.
Serve:
Serve hot, garnished with freshly chopped parsley and lemon wedges on the side for a bright finish.
