Ricotta Spinach Lemon Spaghetti
Ingredients:
1 lb spaghetti
2 tbsp olive oil
2 cloves garlic, minced
2 cups fresh spinach, chopped
1 cup ricotta cheese
1 lemon, zested and juiced
Salt and pepper to taste
Directions:
1. Cook Pasta: Cook spaghetti according to package instructions. Drain and set aside.
2. Sauté Spinach: In a skillet, heat olive oil over medium heat. Sauté garlic until fragrant. Add spinach and cook until wilted.
3. Combine: Add cooked spaghetti to the skillet. Stir in ricotta cheese, lemon zest, and lemon juice. Season with salt and pepper.
4. Serve: Serve hot, garnished with extra lemon zest.
