Garlic Honey Baked Veggie Rice Bowl
Ingredients:
2 cups mixed vegetables (such as bell peppers, zucchini, and carrots), chopped
1 cup uncooked rice
2 cloves garlic, minced
2 tablespoons honey
2 tablespoons soy sauce
1 tablespoon olive oil
Salt and pepper to taste
Instructions:
Preheat the oven to 375°F (190°C) and grease a baking dish.
In a bowl, mix together the garlic, honey, soy sauce, olive oil, salt, and pepper.
Place the chopped vegetables in the baking dish and drizzle with half of the honey garlic mixture. Toss to coat.
Bake in the preheated oven for 15 minutes.
Meanwhile, cook the rice according to package instructions.
Remove the vegetables from the oven, add the cooked rice to the baking dish, and drizzle with the remaining honey garlic mixture. Toss everything together.
Return the dish to the oven and bake for an additional 10 minutes.
Serve hot and enjoy!
