Ingredients:

1 tablespoon olive oil (about 15ml)
1 medium onion, finely diced (about 150g)
2 cloves garlic, minced (about 10g)
1 can (15 ounces / 425g) black beans, rinsed and drained
1 cup cooked quinoa (about 185g from 1/2 cup uncooked)
1 tablespoon chili powder (about 5g)
1 teaspoon ground cumin (about 2g)
1/2 teaspoon smoked paprika (about 1g)
1/2 teaspoon salt (about 2.5g)
1/4 cup vegetable broth or water (about 60ml)
12 small corn or flour tortillas (about 15cm / 6 inches in diameter)

For Toppings (suggestions):
Diced avocado, fresh cilantro, lime wedges, diced tomatoes, shredded lettuce, salsa, or a vegan sour cream alternative.

Directions:

1. Prepare filling: Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 5-7 minutes until softened. Add minced garlic and cook for 1 minute more until fragrant.
2. Add beans and seasonings: Stir in the rinsed black beans, cooked quinoa, chili powder, ground cumin, smoked paprika, and salt. Add vegetable broth or water and bring to a simmer.
3. Simmer and mash: Reduce heat to low and simmer for 5-7 minutes, stirring occasionally, until the liquid is mostly absorbed and flavors have melded. Lightly mash about half of the black beans with the back of a spoon to create a slightly thicker texture.
4. Warm tortillas: While filling simmers, warm tortillas according to package directions (e.g., in a dry skillet, microwave, or oven).
5. Assemble tacos: Spoon the warm vegan taco filling into the warmed tortillas.
6. Garnish and serve: Top with your favorite fresh toppings like diced avocado, cilantro, lime wedges, or salsa. Serve immediately.
