Crispy Hasselback Potato with Garlic Butter and Fresh Herb

 

Ingredients:

 

1 large potato (preferably russet)

 

6 tablespoons unsalted butter, melted

 

3 cloves garlic, minced

 

1 teaspoon smoked paprika

 

Salt and pepper, to taste

 

2 tablespoons fresh parsley, finely chopped

 

1 tablespoon olive oil (optional for drizzling)

 

Directions:

 

Preheat oven to 400°F (200°C). Place the potato on a cutting board and, using a sharp knife, make thin slices across the potato, ensuring they are still connected at the base. You can use two chopsticks on either side of the potato to help prevent slicing all the way through.

 

In a small bowl, combine melted butter, minced garlic, smoked paprika, salt, and pepper. Brush this mixture over the entire potato, making sure it seeps into the slices.

 

Place the potato on a baking sheet lined with parchment paper and roast for 40-45 minutes, or until the potato is golden brown and crispy on the edges.

 

Remove from the oven, drizzle with olive oil (if using), and sprinkle fresh parsley on top.

 

Serve hot and enjoy!
