Ingredients:

4 large sweet potatoes (about 2 lbs), peeled and sliced into 1/2-inch rounds

1/2 cup unsalted butter

1 cup granulated sugar

1/2 cup light brown sugar, packed

1/4 cup water

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 tsp vanilla extract

Pinch of salt

Directions:

Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.

Layer the sliced sweet potatoes evenly in the baking dish.

In a medium saucepan over medium heat, melt the butter. Add the granulated sugar, brown sugar, water, cinnamon, nutmeg, vanilla extract, and salt. Stir until the mixture is smooth and begins to bubble.

Pour the sugar mixture evenly over the sweet potatoes, ensuring all slices are coated.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil, baste the sweet potatoes with the syrup, and bake uncovered for an additional 20-25 minutes, or until the sweet potatoes are tender and caramelized.

Let cool slightly before serving.
