Hearty Ground Beef & Vegetable Stew
Ingredients
1 lb ground beef
4 medium potatoes, cubed
3 large carrots, thickly sliced
1 cup frozen corn
1 cup cut green beans
1 small onion, diced
3 cups beef broth
2 tablespoons tomato paste
1 teaspoon garlic powder
1 teaspoon dried parsley or thyme
Salt and pepper, to taste
2 tablespoons cornstarch + 2 tablespoons water (optional, for slight thickening)
Instructions
In a large pot, brown ground beef and onion over medium heat; drain excess fat.
Stir in garlic powder, salt, pepper, and tomato paste.
Add potatoes, carrots, and beef broth. Bring to a boil, then reduce heat and simmer for 20–25 minutes, until vegetables are tender.
Stir in corn and green beans; cook another 5–7 minutes.
(Optional) Mix cornstarch with water and stir in for a slightly thicker broth.
Adjust seasoning to taste. Sprinkle with additional black pepper and herbs before serving. Enjoy warm!
